Ingredients
  

  • 3 medium zucchinis
  • 1 bell pepper chopped
  • 1 cup cherry tomatoes halved
  • 2 cloves garlic minced
  • 1 small onion diced
  • 2 tbsp fresh basil chopped
  • 2 tbsp fresh parsley chopped
  • 2 tbsp olive oil
  • ½ cup shredded cheese optional
  • ½ cup Ricotta optional
  • ¼ cup breadcrumbs optional

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Slice and scoop out zucchinis to create boats.
  • Sauté bell pepper, garlic, onion, and tomatoes in olive oil. Mix in herbs, breadcrumbs, and cheese (if using).
  • Stuff zucchini boats with veggie mixture and place on a baking sheet.
  • Bake for 20-25 minutes.
  • Optional: Broil for 2-3 minutes for a crispy top.
