Ingredients
  

  • 1 cup rolled oats
  • ½ cup nut butter almond, peanut, or cashew
  • ¼ cup honey or maple syrup
  • 1 scoop vanilla protein powder
  • 1 tablespoon matcha powder
  • 1 teaspoon vanilla extract
  • 2 tablespoons chia seeds optional
  • 1 –2 tablespoons water if needed for consistency

Instructions
 

  • In a large bowl, mix oats, protein powder, matcha powder, and chia seeds.
  • Add nut butter, honey (or maple syrup), and vanilla extract. Stir until well combined.
  • If the mixture is too dry, add water one tablespoon at a time until it holds together.
  • Roll the mixture into small bite-sized balls.
  • Place on a tray and refrigerate for at least 20 minutes to set.
  • Enjoy immediately or store in an airtight container in the fridge for up to a week.

Notes

For a nut-free version, use sunflower seed butter. Want extra crunch? Add some crushed nuts or cacao nibs. You can freeze them for up to a month—just let them thaw for a few minutes before eating!
