Ingredients
  

  • 1 1/4 cups + 2 tablespoons blanched almond flour
  • 2 tablespoons coconut flour
  • 1 1/2 tablespoons baking powder
  • 1 1/2 cups shredded mozzarella cheese low-moisture
  • 1/4 cup cream cheese
  • 3 large eggs 2 for dough, 1 for egg wash

Instructions
 

  • Preheat & Prep: Preheat your oven to 350°F (180°C) and line a baking sheet with parchment paper.
  • Mix Dry Ingredients: In a food processor, combine almond flour, coconut flour, baking powder, and a pinch of salt.
  • Melt & Blend: Melt the mozzarella and cream cheese in the microwave (30-second increments), then mix into the dry ingredients.
  • Add Eggs & Combine: Add two eggs and blend until a smooth dough forms.
  • Shape Buns: Divide the dough into 8 equal parts and shape them into 5-inch-long buns.
  • Egg Wash: Beat the remaining egg and brush it over the buns for a golden finish.
  • Bake: Bake for 22-25 minutes or until firm and golden brown.
  • Cool & Serve: Let the buns cool before slicing.

Notes

Replace part of the almond flour with arrowroot powder for a lighter crumb. Swap mozzarella for provolone or cheddar if needed. Store in the fridge for 5 days or freeze for up to 2 months. Microwave for 20 seconds or toast for a crispier texture.
