Ingredients
  

  • 1 cup rolled oats
  • 1 scoop protein powder whey or plant-based
  • 1 tsp baking powder
  • Pinch of salt
  • 1 cup milk or non-dairy alternative
  • 1 large egg or flax egg for vegan option
  • 1/2 cup chopped strawberries plus extra for topping
  • 1 tbsp honey or maple syrup optional
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C) and grease a baking dish.
  • Mix oats, protein powder, baking powder, and salt in a large bowl.
  • In another bowl, whisk milk, egg, sweetener, and vanilla extract.
  • Combine wet and dry ingredients until well mixed.
  • Fold in the chopped strawberries.
  • Pour the mixture into the prepared dish and top with additional strawberries.
  • Bake for 25–30 minutes, until the top is golden and a toothpick comes out clean.
  • Let it cool slightly, then serve warm with optional toppings like yogurt or nut butter.

Notes

For a creamier texture, you can blend the oats before mixing them into the wet ingredients. You can also substitute the strawberries with other fruits such as blueberries or bananas for a variation in flavor. This recipe can be made in advance and stored in the fridge for up to 5 days or frozen for longer shelf life.
