Ingredients
  

  • 2 slices of bread ciabatta, sourdough, or your choice
  • 1/2 cup of grilled vegetables zucchini, bell peppers, eggplant, mushrooms
  • 2 tablespoons of pesto or hummus
  • 1/4 cup of cheese mozzarella, goat cheese, or vegan cheese
  • 1 tablespoon olive oil for grilling
  • Salt and pepper to taste

Instructions
 

  • Preheat your panini press or skillet.
  • Brush one side of the bread slices with olive oil.
  • Spread pesto or hummus on the other side.
  • Layer with grilled vegetables and cheese.
  • Place the bread slices together, oil-side out, and grill until golden brown and crispy (about 3-5 minutes).
