Ingredients
  

  • 1 medium head of cauliflower cut into florets
  • 1 lb ground chicken
  • 1/2 cup breadcrumbs use gluten-free if needed
  • 1/4 cup grated parmesan cheese optional
  • 1 egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • Olive oil for baking or frying

Instructions
 

  • Boil cauliflower florets until tender, then squeeze out excess moisture.
  • Mix cauliflower with ground chicken, breadcrumbs, parmesan, egg, garlic, onion powder, salt, and pepper.
  • Shape mixture into small nuggets and place on a parchment-lined baking sheet.
  • Bake at 400°F for 20-25 minutes, flipping halfway through, or fry for 3-4 minutes per side.

Notes

For extra crispy nuggets, bake on a wire rack instead of directly on the baking sheet. Freeze extras for future meals!
